It’s been ages but I finally reacquainted myself with pancake mix over the weekend. White Wings make a standard and buttermilk version and these bottled mixes cost around $3. All you need to do is add water to the fill line and shake. It does help to loosen the dry mix before adding the water and also to invert the solution for a bit to get things going before you shake.
The batter ends up being pretty thick which makes it easy to control the shape of your pancakes. I cooked mine for the recommended 2 minutes per side on a medium to low flame. Unused wet mix keeps in the fridge for up to 3 days which is handy for the weekend because it meant we had a ‘special’ breakfast at home for both days.
I was pleasantly surprised at how good this pancake mix tasted. The pancakes were dense and fluffy but not super sweet like ready made pancakes can be.
I’m still working on making my pancakes uniformly circular but I have discovered that they taste pretty good with a few frozen blueberries added just as you drop the batter into the pan.
I’m doing a stock up of these the next time I’m at the supermarket.
